Nebbiolo “Cobianco”
In our vineyards, we prioritize the use of the only Nebbiolo clone native to the Ghemme area, known as “Cobianco.”
Rediscovered in an old vineyard and officially isolated and cataloged in 2012 under the code CVT-C2, this clone is a key expression of our regional identity.
One of its distinctive traits is the cluster structure: medium-sized bunches with small to medium berries. This configuration results in a higher skin-to-pulp ratio, enhancing the concentration of phenolic and aromatic compounds found on the grape’s surface, an essential quality for producing structured, deep wines like Ghemme DOCG.
The Cobianco clone also stands out for its high levels of anthocyanins and flavonoids, along with a naturally low malic acid content. This latter feature helps facilitate the malolactic fermentation process, improving the wine’s overall sensory profile.
We have chosen to plant this clone in all our new vineyards, honoring the viticultural heritage of Alto Piemonte while also embracing a forward-looking technical approach. A Nebbiolo that is authentic, expressive, and deeply rooted in its place of origin.
